Wine Tasting 101 - What the Heck Does Oaky Mean?
The use of oak in wine plays a significant role in winemaking and can have a profound effect on the resulting wine, impacting the color, flavor, tannin profile and texture of the wine. Oak can come into contact with wine in the form of a barrel during the fermentation or aging periods. It can be introduced to the wine in the form of free floating oak chips or as wood staves (or sticks) added to wine in a fermentation vessel like stainless steel. Oak introduced in the form of a wine barrel can impart other qualities to the wine through the process of evaporation and low level exposure to oxygen.

Wine Tasting 101 - Understanding Aromas and Flavors
One thing that can be the most intimidating about being around experienced wine drinkers is when they start talking about the flavors and aromas they are experiencing as they swirl, sniff, and drink their wine. When I first started really getting into wine and going to more and more tastings these were the guys I'd try to steer clear of. I was just starting to understand what it meant for the wine to be "oaky" and they were talking about the spice in the nose and the leather and tobacco in the finish. When they'd look at me and ask, are you getting the green pepper, I'd just smile and nod and then look at my friend and roll my eyes. We've all be there. But as time goes on and you start tasting lots of different types of wine (and there...

The Art Of Wine Tasting
The production of wine in France is tightly controlled by two organisations. The Instituit National des Appellations d'Origine (INAO). This body succeeded the Comite' National des Appellations d'Origine after World War II and controls the hierachy of French quality wines. The other is the Service de Repression des Fraudes, which is responsible for seeing that the very complicated laws on wine production are carried out. On the French domestic market, every bottle carries a capsule conge', or capsule with the government seal on it showing that the relevant tax has been paid. It also shows the wine's quality status.
